The Harvest

Our agaves are nurtured anywhere from 6 to 8 years. Once the agave is ready, and the level of ripeness and sweetness in the heart of the "Piña" is perfect, we start the harvest, known as "La Jima."

Using the right agaves at the right time is key to achieving perfection on our final product.

Where the Liquid Comes From

Gran Casalá tequila is produced at Tequila La Noria (NOM 1494) in Jalisco. Here, mature blue
agave is slowly cooked in traditional ovens, naturally fermented, and distilled on-site, following
methods passed down and refined over generations.
